Lambsquarter

Lambsquarter (Chenopodium album) Parts used: Leaf and seed. The goosefoot-shaped leaves of this abundant plant have long been used as a nourishing food during times of war and famine. The leaves taste like spinach but are much easier to grow and are even more nutritious. Being rich in iron, lambsquarter is considered a remedy for anemia. The seeds can also be collected and used as a grain.
